Traditional Italian Cuisine

(Semi-participation)- Instructor will have some ingrediants prepped before the start of class. Enjoy the marvelous flavors of traditional Italian cuisine starting with "Panzanella", a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You’ll prepare “chicken saltimbocca” using thin sliced prosciutto ham and fresh sage in a lemon, caper, artichoke butter sauce. You’ll make potato gnocchi (Italian dumplings) then we’ll toss them in a medley of sauces including, basil pesto, marinara and brown butter with sage and walnuts. We'll finish with "Cannoli", fried pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of chocolate sauce, garnished with pistachios.

Fondue Fun

Anytime is the right time for fondue! Invite your family and friends and gather around the table. We will create fondues from around the world: Traditional Cheese, Classic Swiss, Beef Bourguignonne, Crab, Bleu Cheese and Tempura. Let's not forget about dessert! We will dunk delectable tidbits of fruit, cake or brownies in wonderful dessert fondues -- chocolates and butterscotch fondue. We will make a variety of sauces and dips to round out the menu!

Spice & Heat

Are you ready to spice things up in your cooking but don't know where to begin? Learn the basics of heat and spices in Thai, Indian, Mexican, and Mideastern cooking, and prepare an adventurous meal for yourself or your family or friends. Included in the menu: Naan with Pepper Hummus, Chicken Skewers with Jalapeno Lime Vinaigrette, Indian Lentil Pilaf with Cilantro, and Green Beans with Mustard Seeds and Coconut. *We will deliver the shopping list and recipes to allow enough time for shopping and preparation.

Cook Along-Homemade Pasta
Cooking

Invite your significate other or family and friends, and take a trip to Italy! The class begins with a signature Italian cocktail (or mocktail). Then, you will learn the art of making hand-made pasta and create three simple signature sauces. The class is interactive. A food processer and pasta machine are NOT requires, but the technique will be demonstrated, as well as the traditional hand-made and cut methods. We will email the shopping list and recipes to allow enough time for shopping and preparation.

Kitchen Knife Skills & Sharpening Basics

What is sharp? We discuss choosing kitchen knives, different knife steels, and the pros and cons of each. We will talk about how a knife becomes dull and how to sharpen, care for and store your knives, and we'll discuss and practice the various knife cuts.
